Why do apples turn brown after slicing?
Because oxygen meets special chemicals the instant an apple is sliced. Slicing breaks open the apple's cells. Enzymes inside react with oxygen from the air, creating those brown pigments. Lemon juice slows things down because its acid changes how those enzymes work.
