Why do rockets drop parts as they fly?

Rockets drop empty parts so they do not carry useless weight. Fuel tanks and engines are heavy. Once a stage burns its fuel, keeping it would waste energy. Dropping it lets the remaining rocket accelerate more efficiently toward orbit or space.
