Why do shops use automatic sprinklers in ceilings?

Sprinklers can attack a fire before firefighters arrive. Each sprinkler head has a heat-sensitive part. When nearby air gets hot enough, that head opens and sprays water over the area. Usually only sprinklers near the fire activate, not the whole building.
