Why do pears ripen after picking?
Because pears keep quietly releasing their own ripening signals after picking. Many fruits produce a gas called ethylene, which triggers softening, sweetness, and new aromas. Being picked doesn't instantly stop those living processes. Warmth speeds ripening along, while the fridge slows it right down.
