Why do basil leaves wilt so quickly?
Because basil's soft, tender leaves lose water incredibly fast. A leaf stays firm as long as its cells are full of water. Basil's delicate leaves dry out quickly once picked, especially in the heat, and without roots to refill them, they soon begin to droop.
