How does cocoa become chocolate flavour?
Because chocolate's flavour develops slowly, through fermenting, drying, roasting, and grinding. Fresh cocoa beans don't taste anything like a chocolate bar. Fermentation transforms their chemistry, drying preserves them, and roasting builds rich, warm aromas. Grinding finally releases cocoa butter and turns the beans into smooth paste.
