Why do roasted nuts smell stronger?
Because heat creates brand new aroma molecules as nuts roast. As nuts roast, their sugars, proteins, and oils react and transform. Browning reactions build warm, toasty smells that raw nuts simply don't have. Too much heat, though, can push those flavours into bitterness.
