Why does flour make sticky dough easier to handle?
Flour helps because dry powder coats wet dough and your skin. Sticky dough grabs your hands when wet starches and proteins cling to skin. A dusting of flour adds a dry layer between the dough and your fingers. It absorbs surface moisture and reduces contact, so the dough releases more easily.
