How does a thermostat know when to stop heating?

Because a thermostat measures the temperature and switches the heater off right on cue. Inside sits a temperature sensor. Older thermostats use a metal strip that bends as it warms; newer ones rely on electronics that change with temperature. Whenever the room dips below the setting, the thermostat tells the heater to switch back on.
