Why does melted cheese stretch?
Because melted cheese's proteins form bendy strands around melted fat and water. Cheese is made of proteins, fat, water, and minerals. As it warms, the fat softens and the protein network loosens. In cheeses like mozzarella, those proteins slide into long, stretchy strands instead of breaking apart.
