Why does rice become sticky when it cooks?
Because heat and water swell rice's starch grains until they leak and cling together. Rice grains are packed with starch. As rice cooks, water soaks in and heat makes the starch swell. Some of it, especially a starch called amylopectin, leaks onto the surface and turns wonderfully gluey.
