How does cream turn fluffy when we whip it?
Because whipping traps tiny air bubbles inside a network of fat droplets. Cream is full of tiny fat droplets floating in water. Whisking beats air into the mix and knocks some fat droplets slightly out of shape. Those droplets cling around the air bubbles, building a delicate structure that holds everything in place.
