Why do onions taste sweeter after cooking?
Because cooking softens onion's sharp chemicals and reveals its natural sugars. Raw onion tastes sharp because cutting it releases sulfur compounds that sting your eyes and tongue. Heat gently changes many of those compounds into milder ones, while breaking down cell walls to let the sugars finally shine through.
