Why does jam turn from runny fruit into a wobbly spread?
Because pectin molecules link up into a loose net that traps fruit juice. Fruit naturally contains pectin, hiding in its cell walls. Cook that fruit with sugar and just the right amount of acid, and pectin molecules connect into a network, holding juice and fruit in place until it wobbles like a proper jam.
