How does sugar turn into brown caramel?

Because heat breaks sugar apart and rebuilds it into rich, dark flavours. Plain sugar crystals start out pale and simply sweet. Heated enough, sugar melts and its molecules begin breaking apart, reacting together to form hundreds of new compounds that build brown colour, nutty aromas, and a hint of bitterness.
