How can mantis shrimp see light that humans cannot?

Because their eyes contain specialised receptors for colours and polarised light. Mantis shrimp eyes are built very differently from ours. They have many types of light-sensitive cells and can detect polarised light, which vibrates in particular directions. This gives them visual information that human eyes simply do not notice.
