Why do sensitive plants fold their leaves when touched?

Because rapid water movement inside special joints makes the leaflets collapse. The sensitive plant sends an electrical signal the instant it's touched. Cells in its swollen leaf joints lose water pressure almost instantly, folding the leaflets shut, perhaps to startle a hungry visitor away.
