Why does maple sap flow strongly in early spring?
Because freezing nights and warmer days create shifting pressure inside the tree. In late winter and early spring, temperatures swing above and below freezing. Those swings affect gases and water inside the maple's wood, building pressure that pushes sap right out through a tap hole.
