Why do peanuts grow underground after flowering above ground?

Because a fertilised flower sends a special stalk down into the soil. A peanut plant grows small yellow flowers above the ground. After pollination, a stalk called a peg lengthens and bends downward, pushing its tip into the soil where the peanut pod finishes growing safely in the dark.
