Why do water drops sometimes skate across a very hot pan?

Because the bottom of each drop flashes into vapour and creates a slippery gas cushion. On a pan far hotter than boiling water, the underside of a droplet vaporises almost instantly. The vapour layer lifts the liquid slightly away from the metal. With less direct contact, the drop can race around and survive longer than expected.
