Why did Mars grow a volcano far taller than Mount Everest?

Because lava erupted in one region for a very long time without moving tectonic plates carrying the volcano away. Earth's crustal plates move over volcanic hot spots, spreading eruptions across chains of volcanoes. Mars lacks the same active plate system. Lava repeatedly piled up in one place, helping Olympus Mons grow into an enormous shield volcano.
