Why do ion engines push so gently for so long?

Because they accelerate tiny charged particles very efficiently instead of burning fuel in a powerful burst. An ion engine uses electricity to give charged atoms enormous speed and fire them from the spacecraft. The thrust is weak, but it can continue for months. Slow, steady pushing gradually builds a large change in speed using relatively little propellant.
