How can galaxies collide without most stars crashing into each other?

Because the distances between individual stars are enormous compared with the stars themselves. When two galaxies overlap, billions of stars pass through the same broad region. Yet stars are tiny points separated by vast spaces, so direct star-to-star crashes are rare. Gravity still reshapes both galaxies and can squeeze gas into new star-forming regions.
